Kicking Off the Halloween Season
Today is our first Halloween activity. My daughter and I are going with her Daisy troop to one of the sororities on campus. She is excited about it partly because she’s talked pone of her brothers and me into wearing Five Nights at Freddy’s costumes. She is Freddy, and I am Chica. I’m not as excited because my costume is intended for a cool Halloween night, and it’s supposed to be high 80’s today.
What Did I Make Today?
I’ve been wanting to revisit my chocolate cupcake recipes, so I selected Ridiculous Chocolate Cake by Cookies and Cups. While I was waiting for the cupcakes to cool, I made something I’m calling No-Bake Chocolate Pudding Cookies based on a recipe from Little Dairy on the Prairie.
How Did It Go?
Mmmm, pretty well? The cupcakes certainly turned out cute, light and fluffy, and tasty. All good things! The ones I baked 18 minutes were better than the ones I baked 16 minutes. This recipe might not be the best one for cupcakes. Both batches fell in the middle. Fortunately, I was really good about not overfilling so they didn’t spread. I just piled on the icing so I could decorate them. I got 33 cupcakes, and it took almost two full batches of buttercream to decorate them.
My No-Bake Chocolate Pudding Cookies are based on the recipe for Pumpkin Spice No-Bake Cookies by Little Dairy on the Prairie. I used chocolate pudding and chocolate chips and left out the pumpkin spice.
These were not well received. Oh, well.
